Cool fact about Metropolis…

Co-Founder Jeff Dreyfuss knows 11 languages, and speaks four of them – Spanish, Indonesian, Japanese and Italian – relatively fluently. He also speaks Polish, French, Russian, German, Arabic and Portuguese at varying degrees of fluency.

The name Metropolis comes from Plato's notion of Polis, or city-state. A Polis is complete and sufficient unto itself, much like a community.  In this regard, community and the regard for differences among people and their ideas are central to the coffee philosophy at Metropolis.

Founded by Jeff and Tony Dreyfuss, a dynamic father/son duo, Metropolis operates a café at 1039 W Granville in Edgewater, a diverse, vibrant community tucked into Chicago's far north side.  They also operate a thriving wholesale business, servicing retailer accounts around the city. 

While most people may immediately think about the word “tension” when thinking about working with a family member, the good people at Metropolis Coffee think about tension in a different way.  In fact, they embrace tension and believe it lends to the essence of coffee.  Tension in this context is relative to the craft of roasting - the hardness of the bean vs. the heat of the roaster, the pressure of water in the machine vs. the dense pack of the fine grind.  Tension fuels creativity, and creativity fuels the experience for the Metropolis family of roasters, baristas, employees, and customers. 

Tension is certainly an important ingredient to Metropolis’ “special sauce”, but so is respect.  The team challenges themselves to respect their farmers by paying fair prices, and to respect their customers by taking great care in the roasting and brewing process.  But they take it even further.  They respect the right for everyone to have a fair shot.  This is validated in their partnership with Aspire, a Chicago nonprofit whose mission is “to support the successes of kids and adults with developmental disabilities, strengthen their families and build embracing communities.” 

One of the many things we love about Metropolis is the Dreyfuss family themselves, and their humbling journey which landed them as one of the premier coffee roasters in Chicago.  Jeff fell in love with the seemingly endless world of coffee in the late 90’s while teaching Indonesian language at the University of Washington-Seattle.   His son, Tony followed quickly in his father’s footsteps, landing a job shortly out of college at a coffee shop in Portland, where he worked his way up to management.  With a shared love for coffee, the father/son team attended a trade show in Seattle called Coffee Fest and purchased a coffee-roasting machine with the idea of going into business.  Shortly thereafter they moved to Chicago (where Tony’s wife grew up) and opened Metropolis Coffee Company.  The date was December 21st, 2003 and as they say, the rest is history.
